Why Vednidhi A2 Cow Ghee
Vednidhi A2 Cow Ghee is produced using traditional Bilona (churning) method at the source
with highest industry standards. In this process the ghee is prepared by hand churning A2 curd
using a forward and reverse process which maintains its original taste and enhances its
medicinal properties. These cows graze freely in the natural Chambal (Madhya Pradesh) forest
habitat on organic pastures, self-selecting their feed and not from the artificial feed of a goshala
(dairy farm). For this reason, the milk obtained from these cows contains numerous minerals,
herbs which are free of any chemicals, hormones and pesticides. These products connect
consumers directly with the Gaupalaks (cow farmers) for whom these cows are the sole source
of livelihood.

Processing – Bilona, Earthen Pot Usage

  1. A2 breed cow fresh milk is procured and the curd is set on earthen vessels.
  2. The curd is churned in a traditional manner by a churning staff of “Mathni”. This is known as
    “Bilona” process.
  3. Hot or cold water is added during the churning process in an earthen vessel.
  4. Due to the churning process pure white butter is generated. The butter which is extracted is
    boiled on a cow dung flame or stove.
  5. Post boiling the butter, ghee is produced and stored in earthen pots. This Ghee has a very nice
    smell, yellow in color and it is very tasty.
  6. During the process buttermilk and khoya (dried whole milk) is extracted. Buttermilk can be used
    for direct intake and Khoya or Mawa is used in making sweets. Desi cow buttermilk is also a very
    healthy drink.

Importance of Gir Cow Breed
Historically the desi cows specially the Gir breed (that originated from the Gir forests of
Saurashtra -Gujarat) of cattle is a highly disease resistant breed thereby eliminating the need for
drug administration. The sad reality of the white revolution was that it led to cross-breeding
with European cows and import of foreign hybrid breeds for higher yield in order to meet the
goal of mass production. This has brought us to a situation today where the desi cow has
become a dying breed in India.

Why A2 Milk is Superior to A1 Milk
Milk produced by the desi Indian Cows like Gir is of A2 variety and Cross Bred Cow milk
is of A1 variety. The classification of milk as A1 and A2 is based on the type of beta-casein
present in the milk. Studies by the National Bureau of Animal Genetic Resources (NBAGR),
Karnal, have established the superiority of A2 milk in Indian breeds. Foreign breed cows (Jersey
and Holstein etc.) produce A1 milk which gets its name from the A1 beta-casein protein present
in it. There is a strong evidence linking A1 milk (Foreign breed cows) to ill-health conditions like
Type -1 diabetes, cardiovascular disease, Ischemic Heart Disease (IHD), Autism, Schizophrenia,
Sudden Infant Death Syndrome (SIDS), Autoimmune Diseases, Lactose Intolerances and
Allergies. Seasonal Allergic Rhinitis (chronic cough, congestion, hay fever) is entirely related to
A1 milk
